Banana Bread

Growing up my Mom made a lot of banana bread and I LOVED it. The best part was that she put chocolate chips in it. When I tried this paleo banana bread recipe and it reminded me of my Mom’s, you know I was excited!

Ingredients

  • 3 small overripe Bananas

  • 3 Eggs

  • 1/2 cup Almond Butter

  • 1/4 cup Coconut Sugar

  • 1 tsp Pure Vanilla Extract

  • 1 1/2 cups Almond Flour

  • 1/4 cup Tapioca Flour

  • 1 tsp Baking Powder

  • 1/2 tsp Baking Soda

  • 1/4 tsp Salt

  • 3/4 cup Dark Chocolate Chips (We use Enjoy Life)

Instructions

  1. Preheat oven to 350 degrees F.

  2. Start by placing your bananas in a large bowl and mashing them up. Add in the eggs, almond butter, coconut sugar and vanilla and whisk until smooth.

  3. Next add in the almond flour, tapioca flour, baking powder, baking soda and salt. Gently stir the dry mixture into the wet ingredients until just combined (don’t overmix). Then stir in the chocolate chips, leaving a few to sprinkle over the top of the loaf.

  4. Line a baking pan with parchment paper and pour in the banana bread mixture. Sprinkle the remaining chocolate chips on top.

  5. Place in the oven and cook for 55-65 minutes or until golden brown and cooked all the way through.

  6. Remove from the oven and place on a cooling rack.

  7. Enjoy! I recommend eating it warm.
