Breakfast Tacos

Ingredients

  • Bacon

  • Eggs

  • Corn Tortillas

  • Avocado

  • Salsa (We love Joe T Garcia’s Salsa or Mrs. Renfro’s Mango Habanero or Peach Salsa)

*I recommend 1 tortilla, 1 slice of bacon, 1 egg, and a few slices of avocado for each taco, so multiply your ingredients by the number of tacos that you want.

Instructions

  1. Start by cooking the bacon. Place bacon strips in a pan and cook over medium heat, flipping occasionally. Once fully cooked, remove bacon from the pan and place on a water towel lined plate.

  2. Next remove most of the bacon grease, leaving just enough to scramble your eggs in. Crack eggs into the pan, give them a good scramble with a spatula, and then continue moving them around until fully cooked. Remove eggs from heat.

  3. Prep your Avocado by slicing it into thin slices and removing it from the shell.

  4. Now it’s time to assemble your tacos. Heat your tortillas up in a clean pan or the microwave. Place your bacon strips on each tortilla, add your eggs, add your avocado, and finish it off with a big spoonful of salsa.

  5. Enjoy!
