Ya’ll already know my love for Mexican food is real. This is another one of my go to options when I’m craving some good old Mexican food. Whether you’re making it at home or ordering it when you’re out, fajitas are one of the healthier Mexican food options out there.
1 lb Chicken Breast
1 1/2 Tbsp Fajita Seasoning
4 Bell Peppers
2 Cups Rice (cooked)
3 Tbsp Avocado Oil
Start by cooking your chicken.
For grilled chicken (my preference), preheat your grill. Coat your chicken with your fajita seasoning and then add it to the preheated grill. Cook until finished, flipping it every few minutes. It should take about 10-15 minutes (depending on the thickness of your chicken).
For stovetop chicken, heat a skillet or pan over medium heat. Add a splash of avocado oil and allow it to heat up for a few seconds. Coat your chicken in the fajita seasoning and then add it to the pan. Cook it until finished, flipping it every few minutes. It should take about 10-15 minutes minutes (depending on the thickness of your chicken).
Next prepare your rice by cooking it according to the instructions on the package.
Now on to the bell peppers. Rinse them and dry them off. Remove the stems and seeds and slice them into thin slivers. Add bell pepper slivers and 1 1/2 Tbsp avocado oil to a skillet or pan and cook on slightly below medium heat until they are tender, about 10 minutes. Stir them every few minutes. Once finished, remove them from the pan and place them to the side.
Next are your onions. Remove the outer layer and slice them into thin slices. Add them to your skillet or pan with 1 1/2 Tbsp avocado oil and cook on slightly below medium heat until they are translucent and tender, about 10 minutes. Stir them every few minutes. Remove cooked onions from the pan and set to the side.
Now it’s time to assemble your delicious Fajita bowl! Start with your rice, add bell peppers and onions, and top with your chicken.
