Ground Beef Nachos

I’m starting to sound like a broken record with how often I explain my love for Mexican food. So, rather than explain it once again, let’s just get into this recipe. All you need to know is these nachos are delicious.


  • 2 Sweet Potatoes

  • 2 Tbsp Avocado Oil (or whatever oil you want to use)

  • Salt

  • Pepper

  • 1 lb. Ground Beef

  • 1 Tbsp Taco Seasoning

  • 2-3 Ripe Avocados

  • 1/4 cup Salsa (My suggestion is Joe T’s Medium Salsa)

  • 1/4 tsp Garlic Powder

  • 1/4 tsp Chili Powder

  • 3/4 Tbsp Fresh Lime Juice

  • 1 head Iceberg Lettuce


  1. Start by making your sweet potato chips. Preheat oven to 400 degrees F. Rinse, dry and slice your sweet potatoes into thin slices with a mandolin. Place slices in a bowl and drizzle with avocado oil. Mix them around until they are all coated in oil. Place slices on a baking stone or sheet covered in parchment paper. Sprinkle with salt and pepper. Place sweet potato slices in the oven and bake for 10 minutes. Remove from the oven and flip the slices over. Return to oven and cook for another 5 - 10 minutes, checking on them often - they go from brown and crispy to burnt very quickly.

  2. Next brown your ground beef in a pan or skillet over medium heat. Once the meat is cooked all of the way through, drain excess fat. Add the taco seasoning and mix until the meat is well coated.

  3. Next start your guacamole by removing the insides of the avocados and mashing them in a bowl until only small chunks remain. Add salsa, garlic powder, chili powder and lime juice and mix it all in.

  4. Then rinse and chop your lettuce.

  5. Finally, assemble your nachos! Start with your sweet potato chips, then add your guacamole, ground beef, and chopped lettuce. Top with extra salsa if you need more spice.

  6. Enjoy your fiesta!
