I’ve found that most people feel one of two ways about meatloaf: You love it or you hate it. Personally, I think meatloaf is pretty great. This recipe has the perfect amount of flavor and is easy to make!
1 lb. Ground Beef
1/4 cup Almond Flour
2 Tbsp. Tomato Paste
3 Tbsp. fresh Basil (chopped)
1 tsp. Garlic Powder
1 tsp. Salt
2 Tbsp Tomato Paste
1/4 cup diced Tomatoes
1 Tbsp. Apple Cider Vinegar
1 Tbsp. fresh Basil (chopped)
Pinch of Salt
Preheat oven to 400 degrees (F).
Combine ground beef, almond flour, tomato paste, basil, egg, garlic powder and salt in a bowl and mix until evenly combined. Place mixture on a foil lined baking sheet or a baking dish and form into an even loaf.
Combine tomato paste, diced tomatoes, apple cider vinegar, basil and salt in a bowl and mix thoroughly. Cover the top of the meatloaf with mixture.
Bake in the oven until cooked all the way through - about 30 minutes.
Serve with your favorite vegetables and enjoy!
