Tomato Basil Meatloaf

I’ve found that most people feel one of two ways about meatloaf: You love it or you hate it. Personally, I think meatloaf is pretty great. This recipe has the perfect amount of flavor and is easy to make!


  • 1 lb. Ground Beef

  • 1/4 cup Almond Flour

  • 2 Tbsp. Tomato Paste

  • 3 Tbsp. fresh Basil (chopped)

  • 1 Egg

  • 1 tsp. Garlic Powder

  • 1 tsp. Salt

For Topping:

  • 2 Tbsp Tomato Paste

  • 1/4 cup diced Tomatoes

  • 1 Tbsp. Apple Cider Vinegar

  • 1 Tbsp. fresh Basil (chopped)

  • Pinch of Salt


  1. Preheat oven to 400 degrees (F).

  2. Combine ground beef, almond flour, tomato paste, basil, egg, garlic powder and salt in a bowl and mix until evenly combined. Place mixture on a foil lined baking sheet or a baking dish and form into an even loaf.

  3. Combine tomato paste, diced tomatoes, apple cider vinegar, basil and salt in a bowl and mix thoroughly. Cover the top of the meatloaf with mixture.

  4. Bake in the oven until cooked all the way through - about 30 minutes.

  5. Serve with your favorite vegetables and enjoy!
