Spaghetti and Meat Sauce

I grew up eating a lot of spaghetti. It was a staple in our home, and I don't think I need to explain to anyone why (it's easy and DELICIOUS). Here are a few different healthier variations on your classic Italian tradition.

Option 1: Spaghetti with Chickpea Noodles

Ingredients

  • 1 lb. Strauss direct Ground Beef*
  • 1 1/2 Tbsp. Avocado Oil
  • 1 Onions (chopped)
  • 1 Zucchini (chopped)
  • 1 Squash (chopped)
  • 1 jar Muir Glen Spaghetti Sauce (It's made with all real ingredients - I like Roasted Garlic flavor. If you like your sauce VERY saucy, then use 2 jars of sauce.)
  • 1 tsp. minced Garlic
  • 1 tsp. Italian Seasonings
  • 1 box Banza Chickpea Pasta (Fun fact: Chickpea pasta is high in protein!)

Instructions

  1. In a large pot, boil chickpea pasta in water according to instructions on the box. When finished, strain and return to the pot.

  2. In a skillet, heat avocado oil on medium heat. Add onion, zucchini and squash. Cook on medium heat until all 3 are soft. Remove from heat.

  3. In a skillet, brown ground beef until cooked all the way through.

  4. In the large pot containing the pasta, add the spaghetti sauce, vegetables, ground beef, garlic and Italian seasonings. Heat on medium heat until everything is warm.

  5. Serve and Enjoy!

Option 2: Spaghetti with Zoodles

Ingredients

  • 1 lb. Strauss direct Ground Beef*
  • 1 1/2 Tbsp. Avocado Oil
  • 1 Onions (chopped)
  • 1 Zucchini (chopped)
  • 1 Squash (chopped)
  • 1 Red Bell Pepper (chopped)
  • 1 jar Muir Glen Spaghetti Sauce (It's made with all real ingredients - I like Roasted Garlic flavor. If you like your sauce VERY saucy, then use 2 jars of sauce.)
  • 1 tsp. minced Garlic
  • 1 tsp. Italian Seasonings
  • 1 package Cece's Veggie Noodle Co. Noodles (There are many different options - Zucchini, Butternut Squash, Sweet Potato, Beets. You can find them at Kroger, Super Target, Central Market, Whole Foods, Market Street, etc.)**

**If you have a Spiralizer and want to make your own Zoodles, be sure to pick up extra vegetables to make your Zoodles.

Instructions

  1. In a skillet, cook Zoodles according to package instructions. Once cooked, place Zoodles in a strainer in the sink while you prepare the rest of the meal. Often times, Zoodles release quite a bit of water during/after cooking. 

  2. In a skillet, heat avocado oil on medium heat. Add onion, zucchini, squash and bell pepper. Cook on medium heat until all 4 are soft (bell pepper may still be a bit firm). Remove from heat.

  3. In a skillet, brown ground beef until cooked all the way through.

  4. In the large pot containing the pasta, add the spaghetti sauce, vegetables, ground beef, garlic and Italian seasonings. Heat on medium heat until everything is warm.

  5. Serve and Enjoy!
