Sweet and Savory Sweet Potato Toast



  1. Start by making your sweet potato toast. Preheat your oven to 400 degrees (F). Rinse and dry your sweet potato. Cut off the ends and then cut it into 1/2 inch slices. Place slices on a parchment paper lined baking sheet. Cook them until they are fork tender (about 20 minutes), flipping them halfway through. Once they are finished, you can do one of two things:

    If you are going to eat them later: Take them out, let them cool, store them for later, and toast them in the toaster (oven) before assembling them to eat.

    If you are going to eat them now: Turn the broiler on and let them cook until they get crispy (you may want to flip them over halfway through).

  2. Now it’s time to assemble your sweet potato toast!

    For a sweet flavor: Slice up strawberries (or any fruit you like) and place them on top of the toast. Add a drizzle of almond butter and a sprinkle of cinnamon and enjoy!

    For a savory flavor: Mash up an avocado and spread it on top of the toast. Sprinkle some Trader Joe’s Everything But the Bagel Seasoning Salt on top and enjoy!
