We’ve already discussed before how “hash” is basically just the word used to describe a bowl full of random items that taste good together… This breakfast hash is no exception. Sweet Potato Hash Browns, Eggs, Avocado and some seasonings… Easy and delicious. Need I say more?
1 Sweet Potato
2 Tbsp Avocado Oil (or whatever oil you want to use)
Eggs (Fun fact: When eggs are your main protein source for a meal, you should eat as many as you can fit (uncracked) in the palm of your hand.)
Trader Joe’s Everything but the Bagel Sesame Seasoning Blend (It’s cheaper if you buy it at the actual store.)
Rinse the sweet potato and dry it off. Cut off any weird spots and then grate it with a cheese grater. Heat a skillet or pan on medium heat and pour in enough avocado oil to just barely cover the entire bottom of the skillet (about 2 tablespoons). Once the oil has heated up a bit, add your sweet potato hashbrowns and let them cook for a few minutes, checking the bottoms to make sure they aren’t burning. Once your hashbrowns are brown on one side, flip them and let the other side brown up too. Once they are finished, pour them into a bowl and set to the side.
Return the pan to the burner and turn it down to between low and medium heat. Add your eggs, scramble them in the pan and then continue moving them around until they are cooked. (Add a splash more oil before adding the eggs if needed.) Once the eggs are finished, add them to your sweet potato hashbrowns.
Now cut your avocado into small chunks and add it to the bowl as well.
Top with Trader Joe’s Everything but the Bagel Seasoning Blend.
