These sweet potato chips have become my new obsession. They have the perfect amount of crunch and of course they go perfectly with my favorite guacamole recipe… They are delicious and easy to make!
1-2 Sweet Potatoes
1-2 Tbsp Avocado Oil (or whatever oil you want to use)
Preheat oven to 400 degrees F.
Rinse sweet potatoes and dry them off. Slice into thin slices with a mandolin.
Place slices in a bowl and drizzle with avocado oil. Mix them around until they are all coated in oil.
Place slices on a baking stone or sheet covered in parchment paper. Sprinkle with salt and pepper.
Place sweet potato slices in the oven and bake for 10 minutes. Remove from the oven and flip the slices over. Return to oven and cook for another 5 - 10 minutes, checking on them often - they go from brown and crispy to burnt very quickly.
Remove from oven and enjoy with my favorite guacamole recipe!
