I found this recipe the first time I did Whole30 and man, is it delicious! I like it because it’s a great mix of vegetables, meat and plenty of healthy oil, which covers all three of the macros we need - carbs, protein and fat! It’s basically a complete meal, all in one dish!
1 lb. Strauss Direct Ground Beef*
2 medium Carrots or 15 Baby Carrots (peeled and chopped)
1 Green Bell Pepper
1 Onion (chopped)
2 cloves Garlic (minced) (1 tsp pre-minced Garlic)
1 tsp Chili Powder
1/2 tsp dried Rosemary
1/2 tsp Salt
1/4 tsp Black Pepper
3 oz. Tomato Paste (1/2 can)
1/4 cup Water
Sweet Potato Topping:
2 large Sweet Potatoes (peeled and cubed)
1 Tbsp Coconut Oil or Ghee
1/2 tsp Chili Powder
1/4 tsp Salt

Preheat oven to 375 degrees F.
Begin by placing sweet potatoes in a large pot with water. Turn on high heat and boil until the potatoes are soft and can be squished with a fork.
While sweet potatoes are boiling, start on the filling. Combine ground beef, carrots, bell pepper, onion and garlic in a skillet and cook on medium heat until the carrots are soft, about 12-15 minutes.
Once the carrots are soft, add the tomato paste, water, chili powder, rosemary, salt and pepper. Stir until well combined.
Once sweet potatoes are done boiling, drain the water. Combine the sweet potatoes, coconut oil or ghee, chili powder and salt in a blender or food processor and blend until smooth.
Pour the meat filling into a casserole dish and top with the sweet potato mash. Sprinkle with salt and chili powder and bake for 10 minutes.
Serve and enjoy!
