Taco Salad

One of the easiest things in the world to make is taco meat. And one of the easiest things in the world to repurpose is taco meat. In tacos, on salads, in chili, in a breakfast scramble, on top of a baked potato, in a sweet potato hash, on top of nachos… I could go on. This salad is one of my favorites and so simple to prepare!

Ingredients

  • 1 lb. Strauss Direct Ground Beef*

  • 1/2 tsp Salt

  • 3/4 tsp Onion Powder

  • 3/4 tsp Garlic Powder

  • 1 tsp Cumin

  • 3/4 tsp Chili Powder

  • Chipotle Powder to taste (I just do a few shakes)

  • 1 bag or box of Spinach

  • 2 Bell Peppers (sliced or chopped)

  • 2 Avocados (sliced or chopped)

  • 1 can of Corn (drained)

  • 1 can of Black Beans (rinsed and drained)

  • 1 bag of Siete Tortilla Chips (crunched up) (we get ours at Natural Grocers, Central Market or Whole Foods)

  • 1 jar of homemade Ranch

Instructions

  1. Start by browning your meat in a pan or skillet over medium heat. Once meat is browned, drain excess fat. Then add the salt, onion powder, garlic powder, cumin, chili powder, and chipotle powder and stir to coat all of the meat.

  2. In a large bowl, assemble your salad.* Start with the spinach, then add the taco meat, bell peppers, avocado, corn, beans, Siete tortilla chips and ranch.

  3. Enjoy!

*I usually use 1 lb. of ground beef for 4 meals. So with all of your ingredients, use about 1/4 of what you have for each meal. If you need more than 1/4 lb. of ground beef for a meal, adjust accordingly.

**This is one meal that I don’t fully prep all 4 at once (if you put all of these ingredients together and let them sit for a few days, it gets pretty soggy). If you are going to use this recipe as a meal prep, store all ingredients separately and combine your 1 serving portion the morning that you will be eating it.
