Roasted Zucchini and Squash

Growing up I didn’t like zucchini or squash. My mom would make it often and I would either pass it up or choke it down. But then something crazy happened… I grew up. And all of a sudden I realized that I no longer hated zucchini and squash. And that it is super simple to make. Here is one of the easiest recipes ever!


  • 1-2 Zucchini

  • 1-2 Squash

  • 2 Tbsp Extra Light Olive Oil (or Avocado Oil)

  • Salt

  • Pepper

  • Garlic Powder


  1. Preheat oven to 350 degrees (F).

  2. Wash zucchini and squash and cut into 1/4 inch slices.

  3. Place zucchini and squash slices in a bowl and drizzle with oil. Sprinkle salt, pepper, and garlic powder over slices and mix with your hands until all of them are covered in oil and seasonings.

  4. Lay zucchini and squash slices out in a single layer on a baking stone or sheet.

  5. Cook in the oven for 12-15 minutes, until the slices are soft, but not mushy.

  6. Serve and enjoy!
